Edamame, when hungry…


My favorite recipe/when hungry/new vegetable/snack/side-dish: (taken from “The Simpler The Better, by Leslie Revsin)

2 tsp. sesame seeds, 1 tbls. soy sauce, 1/2 lb. frozen edamame, 1 tsp. sesame oil.

toast sesame seeds in a small skillet over low heat, shaking pan until light gold, 1-2 min.

bring 1/2 cup water and soy sauce to boil in a large sauce pan over med-high heat, add edamame and cook, covered, until tender, about 5 min. Uncover and boil away any liquid, 1-3 min.

remove from heat, season w/ salt, then stir in sesame seeds and oil.

soooo good hot and as leftover snack. (1/2 cup edamame=9 carbs)
